Set within the four-star Silver Springs Moran Hotel, the kitchen of Watermarq is led by Executive Head Chef Ciaran Brosnan, whose experience spans some 20 years. He uses fresh local produce to create modern Irish cuisine and his menu features dishes such as pan-fried venison medallions on colcannon mash and chicken roulade stuffed with smoked salmon and spinach leaves. Cosy booth seating and retro tones add to the stylish ambience of the interior, and there is also a cosmopolitan cocktail bar and al fresco barbecues in the summertime.
