Smart, seasonal and eco-friendly food is on the menu at Seasons, an environmentally-aware restaurant set on the waterfront in Brighton's bustling Marina village. Fruit, vegetables, seafood and meats are the main focus of the modern British menu, with 80 per cent of the ingredients produced locally. Décor changes with the seasons, as red winter drapes give way to fresh white curtains in the summer months, although the green dark-wood chairs and bird motifs which give the interior its cosy quirky character remain all year round.
