Le Pavillon is a hotel-restaurant in Bad Peterstal-Griesbach in the Black Forest. The restaurant serves surprisingly creative French haute cuisine in an elegant Alpine-style setting. The chef Martin Herrmann's approach is both subtle and down-to-earth, earning the hotel's gourmet restaurant countless awards in prestigious restaurant guides - including 16 points in the Gault Millau, one star in the Michelin guide, 3 F from the Feinschmecker and four Kochlöffel (cooking spoons) in the Aral Schlemmer Atlas. It is one of Germany's 20 Hotels der Sonderklasse (exclusive hotels), with two restaurants offering an unusual variety of dishes. The gourmet menu includes fillet of turbot with celery mousseline, madeira sauce, white truffle and Lauchagnoletti (leek agnoletti). The à la carte restaurant offers roast fillet of cod on spinach with herb sauce and herb rice. There are 4-course weekly menus, 6-course weekend menus and a substantial breakfast-brunch following different themes on Sundays and public holidays.
