Le restaurant L’Arpège à Paris est une prestigieuse table sous la houlette d’Alain Passard. Virtuose des cuissons et fin connaisseur de la terre, le chef cultive ses propres légumes dans l’Ouest de la France. L’adresse est d’une élégance sans appel.

Le menu de L’Arpège reflète une cuisine créative et subtile. Le chaud-froid d’oeuf au sirop d’érable est servi avec vinaigre de Xérès et 4 épices. Le damier de carpaccio de saint-jacques est agrémenté de truffe noire. Enfin, la tarte aux pommes bouquet de roses épouse le caramel lacté.

L’aventure du restaurant L'Arpège commence en 1986, lorsqu'Alain Passard transforme l’Archestrate d’Alain Senderens, son maître. Il le baptise en hommage à la musique, sa seconde passion et y crée un décor empreint d’un style Art déco.

Au coeur du 7e arr. de Paris, l’Arpège abrite également dans l’Arrière-Cuisine les créations graphiques du chef, soit d’intenses collages.

    Le aspettative sono sempre alte quando si decide di andare in questi ristoranti, all' Arpege sono state tutte confermate! Uno dei migliori pranzi della mia vita! (e di ristoranti ne ho provati molti, è una mia grande passione). Non pensavo che lo chef riuscisse a estrapolare così tanta energia positiva dal mondo delle verdure, perchè sono sempre state pensate come "elementi di contorno" o di completamento a determinati piatti. Era proprio questa la mia aspettativa, ritrovare in quei piatti la stessa energia che si può trovare nel gusto di un gran taglio di carne, cottura e via dicendo. Mi ritengo un gourmet affine gustativamente alla cucina d'avanguardia spagnola (vedi Albert Adrià, David Munoz, Andoni Aduriz), che ha uno stile ed una visione completamente diversa da quella francese! Devo ammettere che Alain Passard, chef di fama e appartenente alla categoria "old school" ha saputo regalarmi un'esperienza incredibile, non scontata, di grande gusto e soprattutto SPIAZZANTE (in termini di registri gustativi che vanno su sapori spinti verso note acide interessantissime), insomma, Alain Passard è ancora vivo e regna sovrano lo Stato francese! Grande, grandissimo Alain Passard!

    We had a most disappointing experience. This was not a three- star experience in food, drinks, service or ambience (cold, corporate and small). The service was just- bad. Dishes were taken before we were finished, or left too long after we were done; our wine glasses sat empty most of the meal; they didn’t serve us at the same time (we know what team service is supposed to be - this wasn’t it). There were a lot of servers - they seemed very inexperienced. And the food- some of the dishes were extraordinary- but after lunch wore on it turned out we were served beets, celery, and leeks in nearly every dish We ordered the chef’s choice, and were told it would be a mix of vegetables, fish and meat. We were told we could be served different dishes. I asked for mostly vegetables, but liked fish too. My husband asked for a mix of everything- and loved sweetbreads (they said they were on the menu). We both got exactly the same thing, and only vegetables. And again, largely just the same 3 vegetables 8 times. The flavors got old, and dishes came too fast (often one on top of another). We were served 2 orange desserts. Lots of different types of desserts were floating around to other tables. We were asked if we wanted something else, I mentioned a dessert I saw go to another table. Our server said no, you can only have this other dessert. We declined. My husband ordered the Calvados the sommelier was putting on everyone’s table. I ordered a dessert wine. He went to another table, grabbed a bottle from it and put it in front of me- and said try this. I reminded him he served that to us at the beginning of the meal- something different perhaps? He disappeared for 15 minutes, returned after my husband was finished with his, and our desserts were done. It took them another 20 minutes to bring us our check after we asked, as we sat with empty plates and glasses. My husband was in the industry, and we go often to fine dining/ 2 and 3-star restaurants. This was shockingly bad.

    Restaurant simple mais très cosy. Nourriture exceptionelle, quel saveur moins à notre goût mais malgré tout très fine et appréciable. Le tartare de betterave, une délicieuse expérience et une sensation vraiment agréable. Service parfait avec des conseils de boisson très bons.

    Malheureusement, je n'ai pas le temps de remplir cette enquête avec la rigueur que vous demandez. Je reste joignable sur mon portable si besoin : 0619583405 En quelques mots, une salle extrêmement chaleureuse, un service irréprochable (chef de salle comme le sommelier), un chef qui passe vous voir, Une cuisine digne du standard d'un trois étoiles avec une 70% des plats réellement EXTRAordinaire, et 30% des plats très bons. Des accords mets-vins remarquables. Un moment inoubliable.

    Excelent experience! From the booking assistance untill the minute that you leave the restaursnt. A restaurant that will remember for the rest of my life, Alain Passard expertees together with the remaining team gives a one life experience! Unique and memorable!!

    Dining at Arpège is a privilege. From the excellent waitstaff to the understated but elegant decor, we immediately were reminded why we love Arpège. However, we were blown away by the food which was even better than we remembered. Whether it was care in preparation and presentation, the combination of flavors or the freshness of the ingredients, no matter. The food was spectacular and the meal was most memorable. I might add that the sommelier was very helpful and the wine list was excellent.

    Magnifique expérience culinaire végétarienne, en 12 plats tous étonnants et très fins. Avec en point d'orgue ce dessert aux pommes dont on comprend mieux maintenant pourquoi c'est le dessert signature du Chef. Nous avons en revanche manqué de chance dans le placement de notre table, juste à coté d'une table de quatre personnes qui parlaient et riaient beaucoup trop fort.Ma femme et moi avions parfois du mal à nous entendre. Cela reste une très belle soirée et merci au Chef Alain Passard d’être venu discuter quelques instants avec nous pour partager sa passion de la cuisine végétale.
