The Waterhouse is Londons most eco-friendly restaurant. The food is organic and locally sourced and the restaurant is powered as far as possible by hydro and solar electricity. Even the water is bottled on site. If that doesn't convince you, The Waterhouse even recycles all of its own waste with its own wormery and is working towards a paperless toilet. Owned by the Shoreditch Trust, it is also seeking to regenerate the local area. The recipes are well balanced, simple and healthy; vegetarians are well served, with dishes such as aubergine flan with tomato sauce, but carnivores can also titillate their taste buds with recipes such as duck confit with Parmesan risotto. Desserts are equally innovative: tangy blood orange and caramel in rhubarb soup is a firm favourite. The décor is subdued and the prices are as appetising as the food. Going green has never been so indulgent.
