Rustique is the hot new Aspen bistro that everyone is talking about. Gourmet Magazine has praised the 'Grandmother Cuisine' on the menu, featuring genuine Onion Soup Gratinee, Escargots, Roasted Sea Bass and Braised Short Ribs.

Regulars call just to ask about the Weird Dish of the Night, and cheese aficionados regale themselves with the seven or more varieties of cheese, accompanied by piping hot bread fresh out of the brick oven. The traditional desserts evoke the feeling of dining in a romantic country inn on a back road in Provence. Fresh fruit tarts, profiteroles with homemade ice cream and chocolate sauce, and a sinful creme brulee are but a few of your delectable choices.

We arrived much earlier than our reservation and they were very gracious. They offered us outside seating rather than wait for our reservation. Wonderful meal. Great service. Many people watching and helping to be sure you got good service. Our food was fantastic from the salad to the salmon and duck and the creme brulee.. It was 50 % off our meals and 10% off our wine due to it being off season. Highly recommend!

We have been long time patrons of Rustique and went here for a "light" meal after a concert. Menu has changed a bit and seemed rather more limited, and we were a bit disappointed with the dishes. Also disappointed that the wine I ordered was "out of stock." Will return but hope for a return to the past.

The food and experience was very good. We started with calamari and it was fantastic.. No tentacles! I had the sweetbreads of veal and my wife had the smoked crispy duck. Presentations were outstanding. I had never tried sweetbreads before so wanted a new experience. Although not bad and I had no frame of reference to compare, I would have preferred something else. My wife loved the duck and roasted cauliflower that accompanied it.
Service was the table enough but not overbearing. The biggest issue was the price, although as we strolled around after dinner we found it was pretty much in line with other Aspen restaurants. A glass of wine for $12 is not what I'm used to paying.

It was a lovely evening, so we sat outside - nice setting and our server never forgot about us.

I dine at Rustique regularly -- sometimes a casual bight at the bar and sometimes a multiple course dinner with a large party or a couple friends. One of Rustique's greatest virtues is that it has menu offerings and a comfortable atmosphere that appeal to my various dining moods. And of course I'm always in the mood for delicious French food! The attentive, informed, and friendly staff play a key part in the positive experiences I have there.
